Mardi Gras Salad

This showstopping salad is our culinary riff on Mardi Gras. The medley of vibrant purple, green, and yellow vegetables are loaded with neuroprotective antioxidants.

Adding our Toasted Herbed Almonds will increase fiber and add a nutty crunch for a perfect crouton substitute.

Our Creole Vinaigrette provides a nice, mild heat that will tantalize your tastebuds in honor of this festive celebration.

This colorful salad pairs perfectly with any of your favorite proteins.

INGREDIENTS for 1 salad serving.

  • 1 cups mixed spring greens
  • 1/2  cup mixed medley of red, yellow, green, orange capsicums
  • 1/3 cup sliced red onion
  • 1/3 cup red beets sliced and lightly steamed
  • 1 cups red and green cabbage cabbage, thinly sliced and chopped
  • 2 Tablespoons of Toasted Almonds
  • 3 Tablespoons of Creole Vinaigrette

Place on your salad plate anyway you wish and drizzle the Creole Vinaigrette over to your Culinary desires.  Enjoy!

Creole Vinaigrette

INGREDIENTS – Makes about 1 cup

  • Juice of 1 lemon
  • 3/4 cup high polyphenol extra virgin olive oil (EVOO)
  • 1/4 cup white wine or balsamic vinegar
  • 1 tbsp dijon mustard
  • 2 garlic clove, minced
  • 1 red or green chili to your desired taste
  • 1 Teaspoon of dried tarragon leaves
  • 1 Teaspoon of chopped parsley
  • sea salt and black pepper, to taste

DIRECTIONS

Measure ingredients and puree in food processor or place in a glass jar with a lid. Screw lid on the jar and shake well to combine. Keep in the refrigerator for up to ten days.
