Epic Raw and Flourless Carrot Cake

Indulge in this guilt-free Flourless Carrot Cake that is sure to satisfy your sweet tooth without compromising your health. This delicious cake is made without flour and is gluten and dairy free, making it perfect for those with food sensitivities.


Ingredients for Cake Base;

  • 1 cups grated carrots
  • ½ cup shredded coconut
  • 2 T. of raw honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 cup of mixed prunes and dates
  • 2 T. sunflower seeds
  • 1/2 cup chopped walnuts (or mix of nuts)


Ingredients for Icing;

  • 1 cup cashews
  • ½ cup melted coconut oil
  • 2T. of raw honey or maple syrup
  • Juice of ½ lemon
  • Pinch of salt
  • 1 T. raw ginger peeled




  1. For the base, place all the batter ingredients in a high-speed blender until combined. You want it to have a little texture.
  2. Line a baking tray with parchment paper and place the dough inside. Use a spatula or the backside of a pie server to evenly press the dough down. Place in the freezer while you make the frosting.
  3. Soak all the cashews in a cup of filtered water for about 30 minutes, then drain off the water. Blend all the ingredients (cashews also after soaking) for the frosting and blend them up in your mixer. You might want to adjust the sweetness according to your personal taste. Once smooth (shouldn’t be too liquid but creamy), pour it over the hardened base and spread evenly with a spatula.
  4. Top with a few crushed nuts and place in the fridge, if you prefer it to be more soft, or in the freezer, if you want it to harden up a bit (in case you store it in the freezer make sure to let it cool down at room temperature before eating).

Avocado-Chocolate Mousse

  • 2 ripe medium to large avocados
  • 2 T. unsweetened cocoa powder
  • 50 grams melted dark chocolate (85%)
  • 2 T. melted coconut oil
  • 2 T. raw honey or maple syrup
  • 1 tsp. vanilla extract
  • 1/4 cup coconut milk
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg


  1. Cut the avocados in half, remove the pits, and scoop out the flesh into a blender or food processor.
  2. Add all ingredients to the blender or food processor. Blend until the mixture is smooth and creamy.
  3. Spoon the mousse into individual serving bowls and refrigerate for at least 2 hours, or until the mousse is chilled and set.
