Gazpacho is a classic cold Spanish soup, perfect for summer days. It’s traditionally made with fresh tomatoes, cucumbers, red onion, and garlic.
Ok, you Northern hemisphere folks, don’t tune out, as it also is great warmed up on a wintery day.
In this recipe we add heaps of vegetables, herbs, and spices to create a flavourful nutrient dense soup to tingle the taste buds, and give you the proper nutrient to fee your Brain!
We do this recipe in a food processor, and blend to your desired consistency. However you can just chop all ingredients coarsely and stir together in a bowl, and BOOM, there you go.
If you can’t get raw tomatoes, you may use a can of chopped tomatoes instead.
Whatever the ingredients, gazpacho is a healthy soup rich in minerals, antioxidants, fiber and in vitamins C, A and E. Red tomatoes, for example, are high in carotenoids such as lycopene and beta-carotene, antioxidants that can prevent prostate cancer, high blood pressure and eye problems.
Gazpacho, once relegated to southern Spain, is now a widely popular soup, refreshing in the hot summer months, but also enjoyable in the cold winter months—that is, when eaten indoors. Although best tasting in the summer months when tomatoes are most ripe and most flavourful, it surely is a soup for all seasons.
Roughly chop all vegetables –
1/2 red onion
1 red capsicum (bell pepper)
1 medium carrot
1 red chile
juice of 1 lemon or lime
few sprigs of Cilantro (coriander)
2 T. Spanish paprika
4 garlic cloves
2 T. Red wine vinegar
1 cup filtered water
salt and pepper to taste
Place all ingredients in a large bowl. Use an immersion blender or blend in batches, to desired smoothness. We prefer our gazpacho somewhat chunky, so only pulse a few times in the blender.
Use what vegetables and herbs are available in your season, have fun with different herbs and spices, and eat cold or warm.
