Raw, Gluten, and Dairy Free Key Lime Torte to “WOW” your guests!

In today’s episode of the Doctoronamission VLOG, I want to do a beautiful gluten-free, dairy-free, raw delicious key lime torte. Now, if you like citrus, and if you like key lime, this is amazing. The great thing about this health-wise, is it is raw, vegan, gluten-free and dairy-free.

Of course, if you ate this all day long, that’s not necessarily healthy, however it’s a beautiful treat. A few different things you can do with this, if you don’t have key limes, just use regular limes. I’m in New Zealand, and citrus is everywhere. We have limes, lemons, oranges, mandarins, kiwifruit, grapefruit, all kind of beautiful citrus, so if you want you can substitute.

This recipe is simple once you master it after the first time, and it will always give you that Citrus, Sweet, and Nutty Flavour. Try variations with different nuts and fruits.


Ingredients

For the Crust –

1/cup dates

1/2 cup almonds

1/2 cup walnuts

1/4 cup shredded coconut flakes

3 T. coconut oil

pinch of salt

For the Filling –

2 cups cashews

3/4 cup key lime juice ( or regular limes)

1/3 cup melted coconut oil

1 T. quality vanilla extract


Instructions

In a 20cm or 8″ torte pan (round is best) used for baking usually. Glass containers are a great option for this recipe.

Blend the crust ingredients together in a food processor until well mixed and chopped. Place the mix in your torte pan, and use your fingers to form a nice crust in the pan. Put the pan in the refrigerator for 15 minutes while you get the filling ready.

Grind the cashews to a fine mix in the food processor, then add the rest of the ingredients, puree and por into your torte pan with the crust.

Put the torte back into the refrigerator for 2- 4 hours to set up. The longer the better!

You could also place in the freezer to 1/2 the time until ready.

Slice into the portions you desire, and garnish with some lime slices and fresh berries.

Notes

Try different nuts and fruits. Garnish with fresh lime slices and berries. Fresh mint is also a nice option to garnish and be chopped into the filling mix.
